Eben Bayer discovered something on his family’s Vermont farm that could save the planet: mycelium, the fine white filaments that are part of fungi such as mushrooms, form a bond as dense and strong as commercial adhesives used in plywood. His company, Ecovative, is now literally growing building materials that can replace plywood, Styrofoam, and packing materials.
